Preserving the top layer of your wedding cake is a cherished tradition, allowing couples to enjoy a piece of their wedding day on their first anniversary (or other milestone event). Some cakes freeze better than others. Dense cakes like fruitcake, chocolate cake, or traditional buttercream cakes tend to preserve well. Cakes with delicate fillings, fresh fruits, or whipped cream may not hold up as well in the freezer.

1. Inform Your Baker

  • Let your baker know that you plan to preserve the top tier. They may suggest the best cake types or provide a special box for storage. Some bakers even offer to make a fresh anniversary cake for you, which can be a great option if you’re worried about the quality of a frozen cake.

2. Remove Non-Edible Decorations

  • Before freezing, remove any non-edible elements such as figurines, sugar flowers, or toppers that aren’t meant to be eaten or frozen. This ensures that your cake is easier to wrap and freeze properly.

3. Pre-Chill the Cake

  • Place the cake in the refrigerator for a few hours so that the icing hardens. This will help prevent the frosting from smearing or getting damaged during the wrapping process.

4. Wrap the Cake Securely

  • First Layer of Wrap: Once the cake is chilled, tightly wrap it in plastic wrap. Ensure that no part of the cake is exposed to air, as this can lead to freezer burn.
  • Second Layer of Wrap: Wrap the cake again in a second layer of plastic wrap to create a good seal and further protect it from freezer burn.
  • Aluminum Foil or Freezer Paper: After the plastic wrap, cover the cake with a layer of heavy-duty aluminum foil or freezer paper. This provides an extra layer of insulation.
  • Vacuum Seal: If you have a vacuum sealer, you can use it for ultimate protection against freezer burn.

5. Place in an Airtight Container

  • Once wrapped, place the cake in an airtight, freezer-safe container, such as a cake box or a plastic container. Label the container with the date so you’ll know when you stored it.

6. Store in the Coldest Part of the Freezer

  • Store the cake in the coldest part of your freezer, usually at the back. Avoid frequent opening and closing of the freezer, as this can cause temperature fluctuations.

How to Thaw Cake on Your Anniversary

1. Plan Ahead

  • Take the cake out of the freezer 24 to 48 hours before you plan to eat it.

2. Thaw in the Refrigerator First

  • Keep it in the wrapping. Place it in the refrigerator and allow it to thaw slowly for 24 hours. This helps maintain the cake’s texture and prevents condensation from forming on the frosting.

3. Unwrap and Thaw at Room Temperature

  • After refrigerating, unwrap the cake and let it sit at room temperature for an hour or two before serving. This will soften the frosting and bring the cake to the ideal serving temperature.
